Pumpkin bread…
Can you smell it now?
Moist, warm, cinnamon clove ginger nutmeg infusion!
The recipe for this bread is one I created after trying different recipes over the years.
It is so tender and succulent.
Mmmmmm.
And smells like autumn heaven, I tell ya.
Mister Lovee likes very moist bread, not dry.
But then again, who likes dry bread that is impossible to swallow?
No one I would think, haha.
Point is, he is crazy over this stuff.
It's moist and tasty as can be.
Slices up like a dream…
The pumpkin puree I use is from pumpkins that I roast.
These loafs are from some pumpkin puree I had from early spring, which I had frozen.
The wonderful thing is that, pumpkin puree freezes beautifully.
So you can have it all year long, until you get your hands on another pumpkin.
Of course, you can use canned puree as well.
These loafs are made using puree from a giant Fairytale Pumpkin.
I did a post on roasting pumpkins here.
The house smelled so wonderful.
Well, you know what that smell is like, I need not harp on how awesome it is.
🙂
I made you a PDF printable recipe for this bread.

Pumpkin Bread
from 🖤 Vanessa Valencia
28 oz. pumpkin puree
1 cup vegetable oil (I use extra light olive oil)
4 eggs
2/3 cups water
1 cup brown sugar
2 cups white sugar
4 cups all purpose flour
2 teaspoon baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
Preheat oven to 350' F
Lightly grease or lightly spray your loaf pans with cooking spray
(I use non-stick pans and a thin layer of cooking spray for these)
I fill 3 loaf pans with this batter –
2 - 9.25" x 5.25" loaf pans
&
1 – 8.5" x 4.5" loaf pan
In a very large bowl mix pumpkin puree, oil, eggs, water and sugars until well blended (I use a hand mixer on low to medium until mixture is really well blended).
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
Stir the dry ingredients into the pumpkin mixture until it is well blended.
(I use my hand mixer on low, and then I give it a good stir)
Pour into prepared pans and bake.
My ovens get really hot, and baked up perfectly at 42 minutes. But you can go up to 50 minutes if need be.
As you know, loaves are done when a toothpick inserted into the center comes out clean.
You can make two large loaves and some muffins instead of 3 loaves if you wish.
(Just toothpick test for muffin cook time)
This bread is so moist and so delicious.
Perfect for the season!
If you like a little frosting on the side, mix up some cream cheese and honey to taste, with a dash of salt if you'd like, and you have a perfect frosting for this succulent bread.
Yummmm!

After all that munching, an early morning stroll in our October garden really hits the spot…
Will you come with?
The flowers have a huge explosion in October and early November in this mild autumn weather.
In fact, some of them are just beginning to bloom now, for the first time.
They just got really big and bushy all summer, and now, flowers.
The desert is such a strange place.
It's like a warm spring here right now…
(Something funny – I tried to get Matty and Miles to sit for a photo. Of course, Matty would have none of that. Miles did sit. So, to get Matty's attention, I told him that there was a bunny in the flowers (he's never caught a bunny, but he dreams of it I am sure). Of course, Matty went out of his head with excitement. And then, he jumped into the marigolds. Miles is face to face with Matty in the marigolds above, but you can't see him, isn't that funny? So technically, he is in the picture, haha. One good thing, the boys never ever trample through my flowers on their own, they are so good. My neighbor's dogs destroy her garden, making it impossible for her to have one. So I am so glad Matty and Miles don't get into those shenanigans.)
The thing is, one day we will wake up and it will be full blown chilly.
No warning.
So that is kinda fun, the huge switch of seasons all of a sudden.
It always happens.
But right now, it's like spring in October.
Yay.
There are so many gourds hanging from the electric/phone box post.
I still can't get over that, the thing I hated the most, is now so beloved to me.
Nothing like a little chalkboard spray paint I guess 🙂
Cosmos and white zinnias dance around…
So many lovely petals…
How the zinnias withstand the Arizona summer heat, I just don't know.
But I am certain they are loving our spring in autumn.
And I for one, am so delighted to still see flowers and butterflies fluttering about.
Well…
I best get my Halloween fiesta put together.
Look at the time!!
October 24th, what????
Where did the time go?
This is so weird.
The last 6 years have vanished.
What's going on here?
😉
Loooove, V

The pumpkin bread looks delicious!!! I love to make pumpkin bread from fresh pumpkins but I did not know you could freeze the puree. Thank you for that.
The garden looks beautiful and lush…I bet the bees and butterflies are in heaven there…
Thanks for sharing…

Vanessa:
How lovely the springtime in fall can be here in the desert. Of course, you’re a bit warmer than I am, but it is like that here too. My white roses are blooming like crazy right now and my blue hybrid morning glory is taking off again in this cooler weather! It is Heavenly!
PUMPKIN BREAD!!! I devour the stuff. Thank you so much for sharing your recipe. I have a good recipe but I’m really looking for a great recipe! I’ll bet yours is to die for!
Zinnias make my heart happy and sad all at once. They remind me so much of my aunt Alice. She grew them as a border around her vegetable garden in the Ozarks of Arkansas. When I was younger and my family would take our yearly “vacation” from California to Arkansas, she would talk to me about gardening and we would take walks all about her property while she told me about the flowers. Zinnias were her favorite. Darn it….I’ve never had much luck growing them myself. Every time I see your zinnias, I think of aunt Alice and yearn to see and talk to her just one more time. Alas ~ she is getting close to 100 years old and is no longer able to live at home. I haven’t seen her in 12 years. Thank you for posting the photos and helping to keep aunt Alice close to my heart.

Oooo! Pumpkin Bread! My Favorite! I am still using the old standby recipe that was on the back of the box of C&H Brown Sugar years ago. And I know the magic secret is to be sure and add that last bit of water on top of the loaf as it is being put into the oven. I know one time I forgot the water and it was not half as moist as usual.
And I do like chopped walnuts in my pumpkin bread too, which the recipe also calls for. I like this season as Costco has their marvelous fruit cake for about $12…I put mine in the freezer in its container and nibble on it by cutting off a frozen slice and warming it up just a bit to thaw it. Yum! Yum! I had one fruit cake last me until the next year! Spoiled rotten I am!
And thank you for your pumpkin bread recipe too.
Hurrah for fall!

Heheehee…it’s me again.
Just popping back to say that I printed off the Pumpkin Bread recipe and I’m gonna give it a whirl this weekend. Pumpkin Bread and a hot cup of Constant Comment. Heaven!!

I LOVE moist quick breads. I’ll try this one, but I didn’t grow pumpkins so I’ll substitute butternut squash.
Your garden is ENVIOULY lovely. I have a green thumb, but I think yours must be a more lush shade of green than mine.
Teresa, that is soooo funny!!!! Greener shade, tee hee 🙂
All I do is sprinkle seeds, and then get up really early and water every
single live long day. No fertilizer or anything. Just water every
morning. I think its just luck ;))))
I would LOVE to see your garden!
Kimcakes!! You have to make the bread – its outrageous. I was
surprised it turned out so good really, because I was inventing as I went
along….. I knew I needed certain things… But I wanted more
pumpkin etc. I am making green cakes now.. lets see if it works
;)))

I am hankering for a snack and I think you should bring me some pumpkin bread. It sounds like a total option, right? I don’t know why I crave coffee at night, but I do, and when I have coffee I would like a snack… your pumpkin bread sounds perfect.
Your garden looks fantastic as always. I wish you could see how large the hibiscus is at the townhouse. You would love it.
Ok, talk to you soon, sis… Douglas says hi and wants some bread, too.
V
I have a fab pumpkin bread recipe but let me tell you the problem i’ve had with it…sometimes the middle doesn’t get done…even after being in the oven over an hour!!! I haven’t made it in a while because of this but then someone told me perhaps i was mixing it too much…that quick breads don’t like to be over mixed…what do you think??
Your baking looks so yummy…I am drooling as we speak. I love the smell of freshly baked goodies.
Your fall flowers are amazing. Things here are turning brown and the flowers are very much the same.
Only two more days untill the Halloween Blog party…I’m so very excited.
Deb, I dont know… thats so strange?
Maybe too much liquids that cant set up?
Maybe if you want, try my recipe and see if it sets up.
Mine set up perfectly – and I wasnt sure it would as it was pseudo
experiential.
Okay, that was auto-correct. I meant experimental, not
experiential.
hahahaa!

Yum! I love pumpkin bread!I might try making a pumpkin roll this year. I’ve never tried it.
It seems funny to me to see all of those beautiful flowers when it’s almost Nov.
Although, it’s been 80 here around Chicago. Fall will be back Fri. or Sat. again when the temperatures drop to half of what they are now!
Some dogs are just more civilized than others and your two seem to be very elegant dogs. My little dog doesn’t run through the flowers either. Sometimes he slips behind them for privacy but that’s all. Thanks so much for the recipe for your pumpkin bread. It will seem even more special coming from you. Have a beautiful day. Diane
YUM!!!! Love this recipe! Thanks doll 😉 My aunt made this amazing pumpkin bread that was like a swirl when you sliced it and had cream cheese frosting in the swirls. I have yet to find that recipe and haven’t asked her. But that was amazing. I highly recommend the cream cheese frosting with anything pumpkiny. You’re truly helping me get into the Halloween spirit! I really haven’t been in it much… all people my age want to do around Halloween is dress up (QUITE scantily) and go to the bar. YUCK! Appreciate Halloween for what it is! MAGIC, SPARKLES, WITCHES! HOCUS POCUS! Working on it, but my generation makes me so sad… haha.
Oh no, its all about an old fashioned Halloween me thinks ;)))))

Your October garden is just lovely! All those flowers… I just can’t imagine it. ^-^
Up here in Washington, it’s chilly enough to have me thinking about hauling out the heater… @_@ But I think I can put it off for a few more nights… maybe. ^-^ If I bake or cook at night, our apartment heats up pretty well, so maybe I’ll just go on a pumpkin bread baking spree? =D
Speaking of baking, I made your caramel corn recipe about a week ago… and it was amazing! I am forever ruined for store-bought caramel corn… XD
I’m making a batch to take to work this coming week. ^-^
As for your gourd covered electric/phone box post… Mother Nature has a way of making things work… especially for those of us who love her & care for her, like you so obviously do. ^-^ A gift, if you will, from your garden faeries. =D
Hope y’all are having fun, and I can’t wait for Saturday!!! =D
XOXO
Hello there Missy V, I looked up my moms Banana Nut Bread recipe because you and Phyllis of Blissitydoodah inspired me! I had no pumpkin and no bananas! What!!!! I have a few frozen bananas in my freezer just a waiting for me to notice them and so be it! The house smells fabulous and I know the recipe is a good one, Yum Yum…. Cheers to you Inspirational Blogesses(?) !!! <3
I wish to be wondering in your Beautiful garden with the boys (Mattie and Miles of course!)
Do you still have butterflies? : )
Your garden looks beautiful.
Guess what I made today? Yes, 3 loaves of your bread. And I ate 2 slices. I think it is the best recipe I’ve ever tried. I have 1 loaf wrapped up to take to my daughter tomorrow (did I mention she’s having another baby? so I’m going to be nannie again). One for the freezer. And one that I’ve already cut.
Thank you for a yummy recipe.
Thank you oodles Sue 😉

I’m overdue for making pumpkin bread! Perhaps this coming week will be the time (I need it to not be so warm, and we’re expected to warm up this weekend!)
YUM that pumpkin bread looks amazingly yum!
I am so uber excited about our halloween parties tomorrow whoop whoop! x
I LOVE pumpkin bread!!!! So yummy! Thank you for sharing the recipe. 🙂 It bet will be great with apple butter. Here’s my favorite go-to recipe for you! http://www.myrecipes.com/recipe/overnight-apple-butter-10000000701039/
Your autumn garden is so gorgeous. Nothing like strolling through gardens in the fall!
Dear Vanessa,
Just wanted to tell you I tried out your recipe this weekend and made the best muffins! I tweaked it a little though. Here’s the changes I made:
Cut recipe in half (makes perfect amount for 12 good size muffins)
Used half White Whole Wheat flour
used organic canned pumpkin instead of roasting my own
Cut sugar back by half cup and added in 1 c. of chopped dark chocolate (leftover halloween candy!)
Omitted the nutmeg as nutmeg and me don’t get along (used allspice instead)
And, the coup de grace: a half teaspoon of cayenne pepper!
The cayenne pepper was a stroke of genius, if I do say so myself.
Everyone loved them and ate them right up, even my oldest daughter who said she was “sick and tired of pumpkin everything”.
Thanks for sharing your recipe!
Sincerely,
Dana Laviano
This is now my favorite pumpkin bread recipe. I put in chocolate chips and cut the sugar to 2 cups. It was perfect! Thanks!
