Easy & Wonderful Homemade Crepes

Crepes are delicious and easy to make.

Once you get the hang of it, you can’t go wrong.

If you aren’t already a crepe making pro, here’s my flawless recipe (with tips).

For the batter you will need

1 cup of all purpose flour

1 cup of milk

3 eggs

2 tablespoons melted butter

a nice pinch of salt (about 1/8 teaspoon)

I’ll share some of my tricks to make these turn out wonderful as we go along.

I always like to put in an extra slurp of milk into my mixture, not necessary, but I do it anyways.

I am known for measuring recipes in handfuls and slurps, and a toss in of this or that.

So, getting all the measurements just right for you is a real treat 😉

Another thing is…

If you don’t drink dairy milk, like us, almond milk (unsweetened) works phenomenally.

In fact, that’s all I use to make crepes.

(and all we drink)

But I have tested regular ole milk too, and it works just as well.

Mix up your ingredients, leaving the butter to the last, then slowly whisk the melted butter in, as you don’t want to cook your eggs.

Your batter should be the consistency of heavy cream, like a thick milk.

It will be rather liquid as opposed to dense batter like.

This is the trick to perfect crepes, the batter consistency.

I like to pour my batter into something with a spout, so I can pour it into my pan easily.

The next trick to flawless crepes?

A hot pan, get it really nice and hot.

Hot pan is key.

Then drizzle in some oil.

I only ever use olive oil for everything (even cakes), so I use extra virgin olive oil here too.

Here is a HUGE tip.

After you pour your oil into your very hot pan, take 3 bunched up paper towels, and wipe the oil out.

Put on an oven mit, please.

(don’t burn yourself, for goodness’ sake!)

Then SAVE the paper towel with oil, as this will be a huge tool.

I put my oiled paper towel on a plate.

 

*Then, every time I make another crepe, I first run my paper towel around the pan to re-oil it.

Now, here is where you will be working quickly and swiftly.

On my right hand I always wear an oven mit to handle the hot pan with, in my left hand I hold my pitcher with batter.

(if you are left handed do what works best for ya)

I grab hold of my pan as I pour the batter, because as soon as I pour the batter in, I want to start tilting my pan around to spread out the batter.

(as you make your crepes you will determine how much batter you need to get the size you want)

Now just tilt your pan around quickly and in circles, to make sure your batter spreads around evenly.

Crepes are nice and thin, so keep that in mind.

Hopefully your batter in your pan now looks like this, below.

Crepes can take about 1-2 minutes to cook on each side, depending on your pan heat.

Mine move pretty quickly, I don’t let them get too browned, or they are not as soft and pliable.

You can tell your crepe is getting ready for flipping when the edges start to curl up, and the center looks more set.

Use a spatula to flip your crepe, as tongs are likely to rip your crepe.

I personally have a lot of practice, so I just grab the curled edges and flip real quick.

Please be careful though, and do not burn yourself, or blame me if you do.

You gotta move fast as heck.

Flip!

Now you can see about how browned the under side looks.

Then just let the other side cook, and pop it onto a plate, stacking them as you go.

And voila, there you have them.

You will get a stack of about 10, maybe 8.

Remember that homemade blueberry jam from last week?

You got it, we used it in our crepes.

We had some with our homemade peach jam as well.

You can fill your crepe with anything you’d like.

Strawberries and whipped cream.

(store bought jam works just as well)

Savory too.

Sometimes I make a delicate guacamole and sour cream crepe.

But mostly, we eat them sweet.

Put your filling on one end and roll.

I just ran off to chase Mister around the house with my cold hands 🙂

Ahh yes, crepes.

Another technique you can use is spreading the jam all over the crepe, and then…

Folding the crepe into a triangle shape, then…

Brown it on both sides with some nice butter in a pan.

Good too.

But a bit heavier in flavor.

We prefer the fresh rolled simple crepe.

And let me tell you, those blueberry crepes?

Unreal.

All I did to make the jam was put in about 3 cups of blueberries and 1.5 cups of granulated sugar in a pot and let it all boil, turning down the heat to a soft boil, for about an hour. (stirring regularly)

You can make jam that you will eat within 1 week without having to do a proper canning process.

(just refrigerate it)

After you get the hang of the basics, you can try other styles, like Crêpe Suzette, or just take a crepe and sprinkle on lemon juice and powdered sugar.  So many ideas out there.

Mister Miles is doing great, no relapse or anything.

Seems like it was a spider or a scorpion that got the poor lad.

Always and forever.

Goodness that fur is lovable.

Sooo easy to love.

I adore his brother as much of course, but let’s be honest, he doesn’t make cuddling easy, haha!

Miles lives to cuddle, and if you forget to cuddle him, he will find you and rest his head on your knee looking up with his big soulful eyes, until you cuddle him up.

It’s only still around because it’s easy to clean 🙂

Wipe-able is good.

It’s funny, when Miles was a baby he used to put himself to bed every night.

If we couldn’t find him, he was sleeping in his little bed.

Now he thinks my bed is his bed.

And he sleeps with me every night, usually on the bottom left corner on his own sheet.

Sometimes I open my eyes in the morning, to find myself nose to nose with him, as he has decided to share my pillow 🖤

But, if I stay up say past 10 p.m., he just marches himself off to bed.

And if you can’t find him, this is where you will always find him.

Meanwhile, Matty (brown dog) follows me around until bed time.

And then curls up on the rug beside my bed.

He loves me, in his own way, a lot.

We have our own bond, and he jumps up behind my office chair to snuggle me.

But only in his own way, how and when he wants.

Once in a blue moon, Matty hops into bed with us, and growls meanly at us if we move weird (or move at all or bother him in the least), which in turn scares Miles, who ends up cowering on top of me.

Then Matty growls more and gives us the ugly face (as Miles and I hug each other in fear, haha!), scoffs at us, and jumps off the bed.

I tell you!!

    My furs are like 2 shadows following me wherever I go, even to the bathroom. If I close the door, they will scratch and make a fuss until I open it. My older dog Lucky is learning bad things from the pup Scout. She is a handful and loves to get into mischief, chewing on things, trying to steal things off the dining room table and T.P.ing our house. She grabs the t.p. off the roll and just runs around with it. She’s stealth, so we don’t notice till it’s all over the place. She ate a shoe I had only worn once, but instead of getting angry, I just sighed and looked at her cute, “innocent” face. She also does puppy races, where she will run and bark while running in a figure 8 on the couches, chairs, outside, inside, different rooms, until she’s tired. My older dog doesn’t like this, so every time she passes, he makes the mean face and growls. But they love each other. Lucky has trouble with his hips and sometimes when he’s outside, he will fall down with legs splayed like Bambi on the ice. Scout will run in and tell us, then run back out to wait with him until we come. She is going to be 2 yrs. (Shih-tsu) and Lucky will be 15 yrs. I love them both to pieces! I enjoy hearing about your furs and their antics. Furs rock! P.S. My daughter and her boyfriend just bought a “robo” hamster yesterday. They named her Mimsy and she’s the cutest little thing. She runs so fast that you can’t see her feet, it’s like she’s floating in the wheel. Robos are smaller than dwarfs and nicer. She’s my first grandbaby…hee hee.

    Let’s try this again. I have 2 furs, a 2yr. old Shih-tsu named Scout and a 15 yr. old rescue mutt named Lucky. Scout has been teaching Lucky bad things. They both follow me around like shadows and I can’t even go to the bathroom alone. If I close the door, they will make a fuss, or try to bust in. Scout loves mischief. She will chew on things (Our furniture looks like we had a beaver attack), steal things and generally try to get away with being bad with her cute face. She’s like a Sour Patch kid. She ate my new shoe and then looks at me with her sweet face and you can’t be mad. Scout likes to T.P. our house by taking the t.p. from the roll and running around with it. She’s stealth and we don’t notice until we see the damage. She also loves puppy racing. She will run around in a figure 8 pattern, barking and jumping on furniture, going in and out of rooms, then grabbing toys and dropping them off. Lucky does not like this and he makes a mean face and growls when she comes by. When Lucky goes outside, sometimes he falls because of his hip issues. He’ll be down with his legs splayed like Bambi on ice and Scout will run into the house to get us then go back and wait with Lucky until we come. She’s my dancing ballerina, my I Love You saying (My hubby taught her that)sweet/sour girl. I love my furs, furs rock! Love hearing about your furs and their antics. P.S. My daughter and her boyfriend just bought a robo hamster yesterday. Her name is Mimsy and she’s the cutest thing! She runs so fast you can’t see her feet, it’s like she’s floating on the wheel!     That bathroom thing happens in my house too, it’s so funny!
    I love the tp around the house, I am like you, I dont’ really get mad.
    I like to let them do whatever they want. Bad, but true.
    Although my dogs have never done the things I see friend’s dogs doing. Like chewing furniture or destroying things, or getting into things they shouldn’t. I could never understand why? My old neighbor’s dog tored her couch to shreds and a couple recliners. WHat’s up with that? haha!
    I don’t know what I would do if I had a dog who always ate shoes – one shoe, no biggie 😉 I react like you.
    But imagine a whole closet of shoes?
    Depending on what shoe though, hahahaa!
    Miles has this HUGE big sturdy sqaure bag of toys. He takes them all out, and plays with them, then i put them away, and then he takes them out again. He knows them by name, sheep, horsie, bunny, monkey. And he will give you the one you ask for. Blows me away.
    Once after a trip I was very tired, and I put one of my fave high heels that was in my car, in his toy bag, thinking it was my travel bag.
    So, Miles must have though, wow treat!! Anbd he chewed it all up, but that was the only time.
    I have no clue what lucky streak came my way with these two very well behaved dogs.
    Although, Matty is so mean we can’t have visitors really, hardly ever.
    So, I don’t know how well behaved that is, hahahahaaaaa!!!

    Ahhh the fur baby tales.
    Maxine (RIP) would always get up in the a.m. with me when I made my tea.
    She would come in RIGHT when I would stir the honey and milk in. I would be clinking the sides of my cup with the spoon and
    I would say “Hello Maxie”.
    One morning she came in a bit early and I said “Hello Maxie” she just stood there, then when I stirred my tea (i kid you not ) she said ‘HELLLLOOOO MAMA’.
    From then on it was an A.M. ritual – when I stirred my tea I always got a big ‘Helloooo Mama’ everymorning. Delightful.
    She could also make bird calls. What a gal.
    Termito (RIP) our male would sit up pretty on his back legs and eye gaze at us right into our eyes while we sat in our chairs or on the couch. He could stay like that for at least 5 min.
    Very sturdy no wobble.
    When we got Termito as a new born I had just been in a terrible car crash and was in bed for months. He would always lay on the top of my head while I was laying in bed recovering.
    Once full grown at 85 lbs. he would jump up in bed and put his paw through my hair on the side of my head sort of pinning my head to the pillow and snuggle my face.
    When he had enough he would give me a kiss and go.
    He never scratched me and he always got those paw nails in my hair extremely close to my scalp.
    Now we have PaChuco.
    Everytime I am on the phone too long he goes out to the backyard and hits the back gate with his front paw, trying to get the gate open.
    PaCHuco is the complete gentlemen dog with a paw on your lap or arm everytime he is near.
    He gives one kiss or two and is never a sloppy kisser.
    He moves and drags his bed around the house daily to where he wants it to be.
    He does not get in his bed too often during the day, but just in case he needs a ‘lil nap it is in the right place for him.
    Wha – Laa and thanks for the waggy DOG Tails, they made my day.
    ANd the crepes – merci madame, tre delish.

    Vanessa thank you for this crepe recipe!! WE LOVE crepes at our house and my husband received a crepe maker for Christmas last year from yours truly (hint hint honey 😉 ) so this will be a huge help to him when he is creating his mussypieces! LOL! 😉

  8. I love pancakes and crepes! Swedish pancakes are actually teeny, tiny crepes – but I prefer the thick mid-sized American style ones.

    I have a dog that sings! We got Lucy at a local no-kill shelter – part corgi and who knows what else. She was a little mischievous as a puppy. A couple of times she managed to climb up on chairs and up onto the table where I had my seedlings and proceeded to eat them! Have you ever seen a dog standing on a table?? She also chewed the corners off a couple of pillows. But now, she is the sweetest dog who is no trouble at all. When my daughter practices her violin, she tips her head back and sings along. It’s the funniest thing. At first we thought it hurt her ears. Then we realized that couldn’t be possible, as she follows my daughter to whatever room she will practice in. My husband is her master. She follows him around like she’s his shadow. If he takes two steps in one direction, Lucy takes two steps. If hubby turns around and takes three steps, so does Lucy. Hilarious.
    Love those fur babies! Can’t wait to make those crepes – although I don’t have those luscious fillings!

    I can’t wait to try your crepe recipe! The last time I tried to for crepes… was not a good thing… lolz… They turned out all rubbery. The strangest texture I’ve ever eaten… o_O

    Yay, crepes are delicious! Our Mal is lovely to us and all strangers that come into our house, but as soon as we are outside he gets very defensive and barky at people and especially other dogs. It is funny because when he does this he seems mean and people always say he must make a good guard dog, but really as soon as the burglar or whoever was inside he would assume they were best friends and try to get them to throw his toy for him. So….not so helpful, silly pup!

    My own fur named Miles just turned 11! He is a rescue from Puerto Rico– from many “miles” away, hence the name! Our 11th anniversary together is November 10th. 🙂
    I love crepes and have found the best recipe in the 1977 edition of Fannie Farmer (also has excellent peanut butter cookie recipes!). I will have to try yours, too. One trick I learned is when the crepe begins to bubble, that’s when it’s ready to be flipped. I like to eat mine with butter and sugar sprinkled on.

    Oh my goodness! So sorry to hear about Miles! Glad to hear the sweet boy is on the mend. Those dastardly spiders!!!!! Anyhow, thank you soooo very much for sharing this crepe and blueberry jam recipe. You make it seem incredibly easy, and I will definitely try it sometime. Thank you so very much!!!!! Matty’s behavior reminds me of our Willow, who acts in a similar way. She is least growly with me. But with everyone else – oh boy! She does the growly thing in bed, too. And each night she waits for me to leave the bathroom before coming into the bedroom. So sweet. Gives Miles AND Matty hugs from me!
