Daydreams + Anne {& other tid-bits}

Transported through a glimmer, a hint of another place, secret passageways, a looking glass, a dream.  What does it take to transport you?  I opened the glass door to an antique piece of furniture, the wavy glass acting as a mirror, picking up shadows and light from two mirrors that face each other.  And just like that, daydreams…

For a second, I was in a magnificent English mansion…

Then I was in a fairytale cottage in the woods, looking out upon a stream, reading in a corner nook, treasures on the walls…

Candles flickered, because even in the height of daylight, there was a cool darkness brought on by the towering forest trees.

Pancakes cooked.

Pumpkins baked.

Squirrels ate nuts, and birds chirped.

And then, I snapped into reality, where pumpkins are really cooking.

In fact, I am on my second day of pumpkin cooking.

You see, I have had to pull some pumpkins from the vine a hair too early (they are already orange, but I like to leave them out a little bit longer), as worms found a way to snuggle into several, sending them to the compost heap.

I have cooked about 6 wormless pumpkins so far.

Scraping out the meat, and pureeing it for baking.

The scent is sublime…

It's that scent, a reminder of carving pumpkins at the end of October, that gets me every time.

It brings so much with it.

Childhood memories.

Recent memories.

All bundled together…

As I cook my pumpkins, with a slight cloudiness outside (monsoons taunting), I don't know why, but I can't help but think and think about Marilla and Matthew.

She was such a huge part of my early years, and I carry her with me still.

I decide to make oatmeal pancakes.

My mom always talks about, and cooks up pancakes, when it gets cloudy… (her mom started the tradition)

Oat flour doesn't give me a headache like white flour does.

We don't cook much indoors during summer, so I very much enjoy cooking on the burner side of our gas grill, under a great big tree.

I just adore it.

And so, heart healthy flap jacks via plein air, it is…

(don't count the butter & syrup, haha!)

Our Vermont maple syrup was missing (Lovee! he probably drank it, he has such a sweet tooth), so we used this Trader Joe's syrup.  It is grade B, but it was lovely.

Oatmeal Pancakes, recipe by memory, let's see…

1 and a half cups of oats

1 cup of buttermilk

1 egg

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

1 tablespoon brown sugar

2 tablespoons vegtable oil (I use extra light olive oil)

Using a food processor, grind one cup of oats into flour.

Then, throw in remaining oats, and all other ingredients.

Process until it becomes batter.

Cook on a hot griddle/pan that you have put a bit of olive oil or butter on.

Just like you would regular pancakes.

Cook until browned on both sides.

Be aware that this mixture thickens quickly, and is a thicker batter altogether.

Makes about 8 – 10 small cakes

(today I accidentally poured in a tiny slurp of orange extract, instead of vanilla.  It wasn't very much, so I added a hint of vanilla also, which created a sublime result)

Note:  I use regular large sized oats, from the big bin at the natural foods store.  So, I am sure any oats would work 🙂

Mmmmm, Prince Edward Island……….

 

Time to wash dishes, and check on my cooking pumpkins, as a start to a list of chores (just ran out and popped mail in the box, just in time, phew!  Don't you just love the mail truck?  And mail, and how convenient that it comes to your very own mailbox?  Seems too good to be true.  I love you Unites States Postal Service!  Even though my last 6 parcels were smashed.  One parcel even came with an apology letter from the post office, taped to it, for being so smashed, isn't that wild?). 

Now, how will I ever get anything done, with dreams on the brain?

    I love those flap jacks…and the smell of them cooking is wondrous. Anne of Green Gables, such an amazing story of growth, imagination and things that dreams are made of…..The best.

  2. I have soooo been craving pancakes lately! Cooking them outdoors must be heaven. I come from Vermont maple syrup land, and I prefer Grade B—-it’s more flavorful: )

  3. Kim, I had just had a shower, and so my hair picked up a faint scent of
    pancakes cooked outdoors 😉 I agree, grade B is thicker and darker, and
    much better suited for pancakes, yumm! Wish we had leftovers
    😉

  4. Miss Linda, I soooo agreeeeee! Oh Anne…. I love her so!
    And Marilla and Matthew too. I remember being fairly young, and seeing the
    first episode on PBS, and thinking, I have to be tough like Anne, she is
    wonderful. And I cried and cried when they kept her………I was
    hooked. I must find my book copy….
    Oh, and when they floated her off as the Lady of Shalott….. Dreamy!
    All of it….sigh…

    Missy V. 1)any time you add a flavoring to a recipe(other than vanilla), if you add an equal amount of vanilla it intensifies and mellows the flavor immensely 2)I want to be transported to an English mansion with Colin Firth as Mr. Darcy and 3)just cut around the worms instead of throwing out the whole pumpkin…….they don’t eat much anyway! The poop lady

    Oh oh, well, dont tell anyone, but…. I did save a couple of the wormy
    ones, butothers had to go to compost, theywere just horrid stinky,
    and had about 4 worms, eeeugh!! Cooked worms, yuckyyuck! Big and fat
    and white and one eyed juice mongers ;)))

    Oh, I have been away for a number of days, visiting my parents with my hubby, son, and daughter, and then heading out further west to attend a family reunion (hubby’s side) in Albuquerque. Oh, and yes, I did think with delight that I was closer to the most wonderful Miss Vanessala! My two furboys were left in the loving care of my parents while we went to the reunion. They were the sweetest to take care of them for a couple of days! Just got back home today and am playing internet catch-up.
    I read Anne of Green Gables when I was growing up!
    Those very naughty worms getting into your pumpkins–ARGH! I am glad you still have several pumpkins that were not inhabited by them. I make some whole wheat oatmeal buttermilk pancakes, but I will have to try your recipe for something different!

    If you always make pancakes when it is cloudy you must have been eating a lot of them lately! There have been so many monsoon teases with dark stormy clouds in the distance, but not enough actual storms in my opinion. Bring on the rain! I tell you what, it is really crazy. It is like the little circle that our house is on is in a protective bubble. Even when there is a huge storm on one side to the north and more dark clouds to the south, the sun is still out over our house. Silly rain, why does it always miss us! I think there may be enchantments at work…..

  11. Oh Miss Alia, we have had buckets of rain, but not so much last year.
    We have had 3 really outrageous rain days this monsoon, and a few regular
    ones. The sort where the entire garden is under water. LOVE
    that! Well, we must ask the rain to visit you next time 😉
    Oh, this is our first time eating pancakes, probably in a year or
    more? haha, but, my Mom and mostly granny, make pancakes when it rains
    😉 I just decided to join in the fun today. Oatmeal pancakes,
    yumms! But, I have to really be in the pancake mood, you know? Hugs

    The weather has been teasing us with thunder, lightning and clouds but still no rain.
    I’ve made oatmeal pancakes. Your recipe sounds delish. We have a local eatery that sells a brand of pancake mix I buy Aretha Frankensteins’.
    I’ve been to PEI with Anne and also when we went to Canada. It was so beautiful there. But getting there was wild-a bridge over 30 miles long.
    Books, movies and smells can transport me.

    I love the ‘Anne of Green Gables’ series…the first time I watched them I was bawling my eyes out…I am a romantic girl at heart…and they touched that hidden spot in my heart that responds to the age of ‘innocence’ in romantic books and movies. Sigh…gone are the days.

  15. Oatmeal pancakes!! Wow that brings back memories of my grandmother. She would add wheat germ to them (she added wheat germ to everything…lol) Thanks for the flashback I will definitely have to make them for my girls!

    I loved the Anne of Green Gable books too. I also adored The Secret Garden and the Little Princess. The pancakes are so yummy looking. What a great idea, to create oat flour. 🙂

    Oh my…pancakes and pumpkins! Yum!!! I simply cannot wait to get some pumpkins – I am MOST eager for fall to arrive. It is so much fun to pick out the most perfect pumpkins for cooking and for decorating. 🙂 We DO have a bottleneck gourd finally beginning to grow…hurray!
    Do you mind if I ask what type of oats you use in the pancakes…regular, quick, steel cut? Or does it not matter? 🙂 I adore Trader Joe’s – we’ve been using the same syrup and it’s really good. 🙂
    I must find the Anne of Green Gables series on DVD – I’m hoping it’s on Netflix. 🙂 Enjoy the rest of the day! xoxo
